Vegan Cookies to Slutty Brownies

As a thank you to my wonderful two week internship at the coolest Hamburg App that exists, aka Findeling, I baked some cookies for all of them.  I got a little request for this recipe, so here it is 😋  These are my all-time favorite cookies to bake, because they seriously are easy, don’t take long and are completely vegan.  If it’s supposed to replace a normal “American cookie”, be a rich gooey cookie bar or just the base layer of Slutty Brownies, this is how you do it:

 CCC (Chocolate Chip C-Ookies)

 108gr (1/2 cup) coconut oil(soft or melted)
 3/4 cup brown sugar (or 1/2 cup normal sugar + 1 tbsp of molasses)
 1/4 cup (62ml) plant based milk (I have used almond, soy or cashew)
→ cream coc. oil and brown sugar together, then add almond milk
 2 cups flour (3/4 cup whole wheat, 1+1/4 white)
 1 tsp baking soda
 1 tsp baking powder
 1 tsp vanilla
 + a tad of salt
→ mix all the dry ingredients, then add to moist ingredients
 3/4 cup (~132 gr) chocolatey chunks (I used mixed dark & white chocolate chips)
→ finally dump in the chocolate

As cookies: form into ping pong sized balls, smash them flat with your hand and bake for 8min at 175º C (350º Fahrenheit).
As cookie bars (really munchy, gooey and almost better than the cookies): press into form* (roughly 1.5cm thick so “high”) and bake for 20ish minutes (I’ve done anything between 15-30min and they’ve always tasted awesome) at 175º C (350º Fahrenheit).

*(this recipes makes slightly more than for a 9×9″ (23x23cm) form, so use the leftover cookie dough for a few normal cookies, freeze it to top your next ice cream sundae feast or use a corner of another form


For Slutty Brownies: (triple decker brownies with a chocolate chip cookie base, oreos in between, and brownies (s.recipe below) to top it off)

So it doesn’t matter if you have too many oreos or too little brownie batter… just mix and match however

→ press the chocolate chip cookie bar (see recipe above) into a form (9×9″ = 23x23cm)

→ layer with oreos (just place them on top so they fill up the whole form)

→ top with brownie recipe below ↓ (and bake for 30min at 175ºC)

 

Vegan Brownies (adapted by Minimalist Baker)
224gr (1 cup) margarine
1 cup brown + 1/2 cup granulated or normal sugar
4 flax eggs ( mix 4tbs ground flax with 10tbs water, stir and rest for 5min) 
1 cup (120gr) cocoa powder
+ a tad of salt
1tsp vanilla
→ cream margarine, sugar, flax eggs, cocoa powder, salt and vanilla 
1.5 tsp baking powder
1.5 cup flour
116gr (2/3 cup) chopped chocolate 
→ mix dry ingredients, then add to the other mixture
→ lastly add chopped chocolate

 

Whomever I’ve made these for, they’ve gotten praised by all.  And then people hear that they’re vegan and seriously don’t believe it anymore.  If you need a quick and easy version I’d just make some cookies… or brownies.  Although cookie bars beat all of them!  And if you have more patience and time then Slutty Brownies are a super fun endeavour!  Perfect to bake as a twosome, not at all difficult, a course of batters to sample (without any inedible raw foods), lots of options to smear your camera full of chocolate and dough for a scrumptious outcome!
