Bordeaux is the French town of wine… but I was more interested in the avo-toasts, matcha and coconut lattes, vegan gluten-free fudgy chocolate cookies and organic ice cream parlors across from cathedrals and churches on plazas, merged by narrow stoned alleyways and beautiful copper lamps . . . and I’m keeping myself short.  Plus wild beaches, spectacular sanddunes and the coasts of oyster farmings are just an hours train ride away.

They’re famous for their fluffy, soft waffles, my favorite being the lime-mascarpone one. But it’s also the perfect spot for a work date, or leisurely breakfast with avocado quinoa fritters or a lox-red beet toast.
